Season the chicken pieces with salt and pepper.
In a large skillet, heat olive oil over medium heat. Add the seasoned chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add a bit more olive oil if needed. Sauté the minced garlic and chopped onion until fragrant and softened, about 2-3 minutes.
Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to soften.
Stir in the spinach leaves and cook until wilted, about 1-2 minutes.
Pour in the heavy cream and bring to a simmer. Let it cook for 2-3 minutes until slightly thickened.
Reduce the heat to low and add the cooked pasta, cooked chicken, shredded mozzarella cheese, grated Parmesan cheese, and Italian seasoning to the skillet. Stir well until everything is evenly combined and the cheese is melted.
Taste and adjust the seasoning with salt and pepper if needed.
