Shred the aged cheddar and smoked Gouda cheeses and mix them together in a big mixing dish.
Put the cream cheese and mayonnaise in the bowl. Toss everything together until it’s well mixed. Evenly distribute the chopped roasted red peppers by adding them to the mixture and stirring.
