The easy cake of the morning: it is made with just a few ingredients and in 5 minutes!

Preparation

The first thing is to take a big and deep boule and break two whole eggs in it. Then pour fifty grams of granulated sugar and beat the two ingredients with an electric whisk.

Once the mixture is light and fluffy, add 60 millilitres of seed oil and start beating again with an electric whisk. Once the oil is incorporated, add 240 ml of orange juice, not all at once and always stirring with the whisk.

Now sift 290 grams of flour into the mix a little at a time and incorporate it by working with a hand whisk. At one point we also sift 16 grams of baking powder, always together with the flour.

Mix again until the powders are incorporated. After that, we take a 22 cm cake tin and line it with parchment paper.

The next step is to pour our dough into it. Everything will be baked in the oven at 180 degrees for thirty, thirty-five minutes. When the cake is cooked, take it out of the mold and brush it to taste with excellent apricot jam (or whatever you like).

Finally, as a garnish, sprinkle with plenty of coconut flour, both on top and on the side. If you like, you can also sprinkle with orange zest.
