- Let’s start from the base of this incredible cake. In a bowl mix 300 g of flour with 30 g of sugar, 1 teaspoon of yeast and 8 g of vanilla sugar.
- Add the cold butter cut into cubes or a good method is to grate it, and work the mixture until you obtain a sandy consistency. Add the egg and mix until a smooth dough forms.
- Butter and flour a 24×24 cm baking pan. Spread the dough on the bottom of the pan, taking care to distribute it evenly.

- In a clean bowl, beat 4 egg whites with a pinch of salt until soft. Gradually add 170 g of sugar, whisking continuously until the mixture is firm and shiny.
- Spread the meringue over the apples in the mold or decorate with the help of a piping bag.
