Potato cakes: They are so delicious that I cook them almost every day!

1. First wash the potatoes, boil them in water with the skin on and cook for about 20 minutes.

Drain, quench and peel.

2. Press the potatoes through the press while they are still hot and let them cool for about 20 minutes

Mix flour with baking powder and fold into the potato mixture.

Now separate 2 eggs. Now mix the buttermilk, 2 egg yolks and 1 egg with the potatoes.

Season with sugar, a pinch of salt and nutmeg. Let it rest for about 10 minutes.

Drain the tuna and shred it in a plate with a fork and add to the mixture.

3. Next, roast the almond flakes in a coated pan without adding any fat and then fold them into the potato dough.

Now beat the egg whites until stiff and fold into the potato mixture.

4. Now heat oil in a pan and add 6 tablespoons of dough in portions.

Fry the potato cakes for about 2 – 3 minutes until golden, then turn them over and bake them for another 2 minutes.

Keep the cakes warm. Process the remaining dough in the same way.
