Beet salad and goat cheese
Ingredients:
2 medium-sized beets, peeled and grated
2 cups of mixed green salad
1/2 cup crunched goat cheese
1/4 cup chopped walnuts
2 tablespoons balsamic vinegar
2 tablespoons of extra virgin olive oil
Salt and pepper to taste
Instructions:
Start by preparing the beet. Peel and grate the beets with a rasp or a food processor.
In a large bowl, mix the grated beet, the salad mixture, the crunchy goat cheese and the chopped walnuts.
