2-3 eggplant
1-2 courgettes
Salt
Frying oil
1 large onion
1-2 peppers
2 tomatoes
1 teaspoon of khmeli-suneli (a mixture of Georgian spices)
Black pepper
1-2 garlic cloves
Aneth (persil and coriander, depending on taste)
Instructions:
Cut the eggplants and courgettes into slices and sprinkle them with salt. Leave them to stand for about 15 minutes, then rinse them and puncate them.
Heat oil in a frying pan and fry the slices of eggplant and courgette until golden. Remove them from the frying pan and set them aside.
In the same frying pan, fry the onion, chopped peppers and garlic until softened.
Add the chopped tomatoes, khmeli-suneli, black pepper and salt according to your taste. Cook until the tomatoes decompose and the mixture thickens.
Put the fried eggplant and courgette slices back in the frying pan and simmer for a few more minutes.
Fill with chopped dill, parsley or coriander before serving.
