- 1 kg of potatoes
- 1 onion
- 150 g of bacon
- 80 g of parmesan
- 300 ml milk cream
- 1 egg
- Salt and pepper to taste
Step by step
- First, wash the potatoes and cook them until they are half cooked.
- Then peel the cooked potatoes and cut them into slices.
- Mix the cream with the egg and cheese, salt and pepper.
- Cut the bacon and onion into small pieces. Book about 2 tablespoons of pancetta; this is sprinkled on the potatoes shortly before the end.
- Melt the butter in a frying pan and return the finely chopped onion. Add the pieces of bacon and fry.
- Preheat the oven to 200 C. Butter a pastry pan with a piece of butter and place the potato slices on it.
- Pour the creamy sauce over the potatoes, spread the mixture of onions and bacon on top and place in the oven at 200oC for 15 minutes. Then finish the cooking at a slightly lower temperature.
- Shortly before the end, sprinkle pieces of reserved bacon, a little cheese and parsley.
