Will Buffalo Chicken Zucchini Boats work for Keto Meal Prep?
Yes, I find this recipe reheats perfectly. I just store in a microwave proof lunch container and heat in 30 second increments until warm. If you want, you can pack a little extra low carb ranch and Radish Chips for a low carb side and a Peanut Butter Fat Bomb to satisfy your sweet tooth! Some other easy keto lunch prep ideas are:
- One Pan Bacon cheeseburger skillet This recipe serves 4 and reheats so well. Serve with small sweet pepper slices and low carb ranch or a side salad.
- Sesame Pork and Green Beans. This recipe serves 4 and comes in at 4.5 net carbs. Since this is my meat and veggie I don’t usually add a side, but I do like to take a little something sweet.

Ingredients
- 2 medium zucchini
- 2 cups chicken, cooked and shredded
- 3 ounces cream cheese
- 1/4 cup ranch
- 1/2 cup shredded cheddar
- 1/8 cup buffalo sauce
- 1/2 cup shredded mozzarella cheese
Instructions
Preheat oven to 350 degrees
Slice the zucchini length wise and use a small spoon or teaspoon to remove the inside of the zucchini and form a “boat”
Place the hollowed zucchini in a 9×13 baking dish.
In a medium size mixing bowl combine the cooked chicken, cream cheese, ranch dressing, shredded cheddar and buffalo sauce.
Top with the shredded mozzarella.
Bake 20-24 minutes until zucchini is fork tender.
