. Preheat your oven to 375°F (190°C).
2. In a large skillet, heat the olive oil over medium heat. Add the sausage pieces and cook until browned, about 5-7 minutes, then remove and set aside.
3. In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
4. Add the green beans and cook for an additional 5 minutes, just until they start to soften.
5. In a large mixing bowl, combine the cooked sausage, sautéed vegetable mixture, potatoes, chicken broth, cream of mushroom soup, salt, and pepper. Mix well.
6. Transfer the mixture to a greased 9×13-inch baking dish. Spread evenly.
7. Cover with aluminum foil and bake for 40 minutes.
8. Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 15-20 minutes, or until the cheese is bubbly and golden.
9. Remove from oven and let it sit for 5 minutes before serving.
Variations & Tips
For those picky eaters, you can swap the green beans for corn or peas, which might be more kid-friendly. If you’re looking for a lighter version, use turkey sausage and low-fat cream of mushroom soup. To add a bit of a spicy kick, sprinkle in some red pepper flakes when sautéing the onions.
