How to make mozzarella and potato balls with tomato sauce?
Rinse the potatoes, peel them and cut them in half, then into slices half a centimeter thick. Put them in a saucepan, cover them with plenty of water, salt them and bring to the boil. Cook for 20 minutes from boiling.
While the potatoes are cooking, prepare the meatballs: chop a few sprigs of parsley. Dip the bread in the water, squeeze it well. Chop it with your hands and place it in a large bowl.
Mix the meat with the bread, grated cheese, chopped parsley and eggs. Season with salt and pepper to taste. Mix all the ingredients well with your hands until you obtain a very homogeneous mixture. Leave to rest for a while in the refrigerator.
Place the puree in a bowl and season it with a generous drizzle of oil, salt and pepper.
Cut the mozzarella into large pieces.
Take the meat out of the refrigerator and form meatballs with your hands.
Drain the potatoes, place them in a bowl and season them with half the tomato. Mix and pour into a baking dish. Add the meatballs and mozzarella, cover everything with the other half of the tomato, add a drizzle of oil.
Bake in a preheated oven at 180 degrees for about 30 minutes. Serve immediately, sprinkled with oregano and parsley to taste. The Mozzarella and Potato Balls in Tomato Sauce are ready to eat.
