Ingredients:
1 large eggplant
40 grams of almonds
40 grams of grated parmesan cheese
1 bunch of fresh parsley
1/2 clove of garlic
Extra virgin olive oil, necessary amount
Instructions:
Preheat the oven to 200°C (390°F).
Wash and cut the eggplant into thick slices. Place them on a baking sheet and drizzle a little olive oil over them.
Bake the eggplant slices for about 20-25 minutes, or until tender and golden. Let them cool slightly before handling them.
While the eggplant is baking, spread the almonds on a baking sheet and toast in the oven for about 5-7 minutes, or until lightly golden and fragrant. Be careful not to burn them.
