This traditional German treat combines juicy strawberries with a velvety vanilla cream on a crispy pastry base. In this post, I will show you step by step how to make this delicious strawberry cake.

Ingredients:
For the dough:

250 g flour
125g kalte Butter
80g sugar
1 No
A pinch of salt

For the vanilla cream:

500ml milk
4 egg yolks
100g sugar
40g corn flour
1 vanilla pod

For the filling:

500g fresh strawberries
2 tbsp strawberry jam
Some fresh mint leaves for decoration

Directions:

Prepare the dough:

Sift flour, sugar and salt into a large bowl. Cut the cold butter into small pieces and add to the flour.
Using your fingertips, work the butter into the flour until the mixture becomes crumbly.
Add the egg and knead everything into a smooth dough.
Form the dough into a ball, wrap it in cling film and let it rest in the fridge for at least 30 minutes.

Preheat oven:

Preheat the oven to 180°C (fan oven).

Roll out dough:

Take the dough out of the fridge and roll it out thinly on a floured work surface.
Carefully place the dough sheet into a greased springform pan (Ø 26 cm) and pull up the edges a little.
Prick the dough several times with a fork to prevent bubbles from forming.
Bake the dough base in the preheated oven for about 15-20 minutes until golden brown.

Prepare vanilla cream:

Cut the vanilla pod lengthwise and scrape out the pulp.
Bring the milk to the boil in a saucepan, then add the vanilla pulp and let it steep for a short while.
In a separate bowl, beat the egg yolks with the sugar until frothy.
Add the corn flour and mix well.
Slowly add the hot milk to the egg yolk mixture, stirring constantly.
Return the mixture to the pot and allow to thicken over low heat, stirring constantly.
Remove the vanilla cream from the heat and let it cool slightly.

Prepare strawberries:

Wash the strawberries, dry them and halve them.
