- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.
- In a large skillet over medium heat, cook the ground beef, diced onion, and minced garlic until the beef is browned and the onions are softened, about 8-10 minutes. Drain any excess grease from the skillet.
- Season the cooked beef mixture with salt, black pepper, garlic powder, onion powder, paprika, dried oregano, dried basil, and crushed red pepper flakes (if using). Stir well to combine.
- Add the sugar-free ketchup and yellow mustard to the skillet, stirring until the beef mixture is evenly coated with the sauce. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Transfer the seasoned beef mixture to the prepared baking dish, spreading it out into an even layer.
- Sprinkle the shredded cheddar cheese evenly over the top of the beef mixture, covering it completely.
- Bake the casserole in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- While the casserole is baking, prepare the toppings by shredding the lettuce, dicing the tomato, and slicing the sugar-free pickles (if using).
- Once the casserole is done baking, remove it from the oven and let it cool for a few minutes before serving.
- To serve, portion out the casserole onto plates or bowls and top each serving with shredded lettuce, diced tomato, and sliced sugar-free pickles (if desired). Drizzle with additional sugar-free ketchup and mustard, if desired.
