Necessary Kitchen Equipment

A large pan
A non-stick pan
A saucepan

A large bowl for the marinade

How to Prepare “My Grandfather Was Right”
Chicken marinade
Start by preparing the marinade for the chicken. In a large bowl, mix together the finely chopped onion, crushed garlic cloves, diced tomatoes, salt, pepper, coriander and cumin.
Dip the chicken piece into the marinade, making sure it is completely covered. Cover the bowl with cling film and leave to marinate in the refrigerator for at least 2 hours. This will allow the chicken to absorb all the delicious flavors of the spices.
Salad preparation
While the chicken marinates, prepare the salad. Cut the cabbage into thin strips and grate the carrot.
In a non-stick pan, heat the vegetable oil and add the crushed garlic cloves and the spicy chili pepper. Fry for 2-3 minutes until the garlic turns golden.
Add the cabbage and carrots to the pan and mix well. Also add the soy sauce and oyster sauce. Continue cooking for a few minutes, adding 20-30 ml of water to prevent it from sticking.
Cook the salad until tender and aromatic. Make sure you don’t let it get too soft. Remove it from the heat and set it aside.
Preparation of Potatoes
In a saucepan, heat the vegetable oil over medium-high heat. Peel the potatoes and cut them into cubes.
Fry the potatoes in hot oil until golden and crispy. Make sure you drain them well to remove excess oil.
