Next, remove both ends of the bananas without peeling them and then cut them into pieces about two fingers thick. Now, gather glass jars of about 700ml capacity and layer the ingredients as follows: a bay leaf, two garlic cloves (or two cloves), two slices of chilli, a teaspoon of coriander seeds and a teaspoon of dill seeds, and a mixture of white, black, green, pink and allspice.

Add the banana pieces (about a dozen per jar) and a few more slices of chilli. Then sprinkle into each jar a teaspoon of sugar, a teaspoon and a half of salt, a teaspoon of 70% vinegar and some hot water.

Once all the ingredients are in place, it’s time to sterilise the jars. Place them in a saucepan of hot water with a cloth underneath to prevent them from breaking. Heat and sterilise the jars, with the lids loosely on top, for about ten minutes.

After sterilisation, carefully dry the jars and seal them tightly to prevent air from entering. Store the jars in a cool place and your bananas will stay fresh for up to two years. Say hello to long-lasting bananas and goodbye to waste.
