Mix the egg and banana:
Crack the egg into the bowl with the mashed banana. Mix well until smooth.
Melt the chocolate:
Place the 80g of dark chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring occasionally, until the chocolate is completely melted and smooth. Be careful not to overheat.
Mix the chocolate with the banana mixture:
Pour the melted chocolate into the banana and egg mixture. Stir quickly to incorporate before the chocolate starts to set.
Cook the mixture:
Heat a non-stick frying pan over medium heat. Pour the banana and chocolate mixture into the pan, spreading it out into a thin layer. Bake for about 1.5 minutes on each side or until firm and lightly browned.
