Baked apple pancakes: tasty, light and low in calories

6 apples
1 teaspoon cinnamon powder
250 grams of flour 00
1 teaspoon of vanilla yeast
half a teaspoon of salt
2 eggs
320 ml of milk
a piece of butter
peel of half grated lemon

Cut the apples into slices and sprinkle with cinnamon. Mix the other ingredients well together until you get a well-even consistency.

Pass the slices of pancakes in the batter, then rest on a baking tray covered with parchment paper.

Bake at 175oC for 20-30 minutes, until cooked. You can serve apple fritters in the oven alone, with a sprinkling of icing sugar or jam.
