Pecan Pie Balls (No-Bake)

Combine Dry Ingredients: In a large mixing bowl, stir together the toasted pecans, graham cracker crumbs, brown sugar, and salt.
Add Wet Ingredients: Mix in the maple syrup, bourbon (or apple juice), and vanilla extract until the mixture is cohesive and sticks together when pressed.
Form the Balls: Roll the mixture into 1-inch balls. Place them on a parchment-lined baking sheet.
Chill: Freeze the balls for 30 minutes to firm up.
Dip in Chocolate: Dip each ball into the melted chocolate, coating them partially or fully, depending on your preference.
Set the Chocolate: Place the dipped balls back onto the parchment paper and allow the chocolate to set.
Store: Transfer to an airtight container and refrigerate until ready to enjoy.
Notes
You can use dark or white chocolate for dipping based on your taste preference.
For added texture, sprinkle extra chopped pecans or sea salt on the chocolate before it sets.
These can be made up to a week in advance and stored in the fridge.
