Ingredients
1 5 pound beef rib roast
2 tablespoons olive oil
4 cloves of garlic, chopped
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
Freshly ground black salt and pepper, to taste

Preheat your oven to 450oF (230oC).
Place the beef rib in a rotisserie, bone side down.
In a small bowl, mix the olive oil, garlic, rosemary, thyme, salt and pepper.
Rub the mixture over the entire roast, making sure it is well coated.
Roast in a preheated oven for 20 minutes to create a crust.
Reduce the temperature of the oven to 165oC (325oF) and continue cooking until the internal temperature reaches 54oC (130oF) for mid-flighting cooking, approximately 1.5 to 2 hours.
Remove the roast from the oven and leave it to stand for at least 20 minutes before cutting it.
