1. Preheat the oven to 180oC.
2. Place the cod fillets in a baking dish.
3. 3. Cut the cherry tomatoes in half and divide them around the fish.
4. Add pitted black olives.
5. Finely chop the garlic and sprinkle the fish and vegetables.
6. Water with a drizzle of olive oil, sprinkle with Provence herbs, salt and pepper.
7. Place the dish in the oven and cook for about 15-20 minutes, until the fish is cooked and the vegetables are slightly golden.
8. Serve hot with accompaniment of your choice.
