To make mayonnaise with hard-boiled eggs and Greek yogurt, you will need the following ingredients:

Preparation of hard-boiled and Greek yogurt mayonnaise
1. Cooking hard-boiled eggs
- Boil the eggs: Place the eggs in a small saucepan and cover them with cold water. Bring to the boil and, once it has reached the boiling point, cook the eggs for 9 to 10 minutes.
- Egg refrigeration: After cooking, transfer the eggs to a bowl with ice-cold water to stop cooking and facilitate peeling.
- Peel the eggs: Once cooled, peel the eggs and set them aside.
2. Preparation of the Sauce
- Mixing eggs: In a mixer or high container, place the hard-boiled eggs. Mix to smooth consistency.
- Add the yogurt: Add the Greek yogurt to the egg mixture and continue mixing until creamy.
- Add mustard and lemon: If you wish, you can add mustard for an extra touch of flavor. Also add lemon juice, salt and pepper to taste.
- Mix again: Mix again until you get a smooth sauce. If the mayonnaise is too thick, you can add a drizzle of extra virgin olive oil to make it creamy.
