Downeast Maine pumpkin bread

Preheat the oven to 175 oC and grease two 23 cm (9 in) bread moulds.
In a large bowl, mix the pumpkin, eggs, oil, water and sugar until everything is properly incorporated.
In another medium-sized bowl, sift together the flour, sodium bicarbonate, salt, cinnamon, nutmeg, cloves, ginger and cardamom.
Slowly mix the dry ingredients with the wet ingredients until dry stains remain.
Transfer half of the dough to each prepared bread pan and bake for 55 to 60 minutes or until an inserted toothpick comes out clean. I recommend covering the loaves of foil for the last 15 to 20 minutes to prevent the top from turning too brown.
Allow the cakes to cool for about 15 minutes in the mold, then remove and place on a cooling grid. Allow the bread to return to room temperature before slicing it for better results.
