Prepare the fruit:
Peel and segment the mandarins.
Peel and slice the kiwifruit.
Peel and chop the persims.
Peel and segment the grapefruit.
Epenze and chop the apple.
Peel and slice the banana.
Prepare the Agar-Agar mixture:
In a small bowl, mix 8 grams of agar with 50 ml of water.
Heat the mixture over low heat, stirring until the agar-agar is completely dissolved.
Mix dairy products:
In a saucepan, heat 350 ml of milk over medium heat.
Add 200 grams of concentrated milk to the saucepan and cook stir for 1 to 2 minutes. Remove from the fire and incorporate 200 grams of sour cream or yoghurt quickly until the whole is well mixed.
