Method of preparation
1. Preparation of the Ingredients
Separate the eggs: Yellow on one side, white on the other. Make sure that the white bowl does not contain any yellow patches for optimal mounting.
Break the biscuits: If you opt for Nutella biscuits or speculoos, break them into small pieces, but not too fine to keep a crunch.
2. Create the cream
Mix the yolks and sugar: Beat the egg yolks with the sugar until the mixture whitens and becomes creamy.
Add the mascarpone and the Nutella: Gently incorporate the mascarpone with the egg yolk mixture to keep the texture aerial. Then gradually add the Nutella to obtain a homogeneous cream.
3. 3. Assembling the tiramisu
Put the whites in the snow: Make sure they are firm so that they do not fall back when mixing.
Slicant incorporation: Gently incorporate the whites into the snow preparation for mascarpone so as not to break them.
