This soft, spicy cake is perfect for a hot chocolate or a cup of tea during the Christmas period. With rich flavors of ginger and molasses, it is easily prepared in a square mould (8 x 8) and is happily shared.
Ingredients (for a 20 cm – 8-8 inch mould)
- 150 g flour
- 1 teaspoon of chemical yeast
- 1/2 teaspoon of sodium bicarbonate
- 1 teaspoon of ground ginger
- 1/2 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cloves
- A pinch of salt
- 100 g sweet butter, at room temperature
- 100 g brown sugar
- 1 egg
- 120 ml molasses (or cane syrup)
- 120 ml milk
