Method of preparation:
Preparation of potatoes: Wash and peel the potatoes, then cut them into thin slices with uniform thickness. You can use a mandolin to get perfectly regular slices.
Using the steaming technique: Instead of conventional frying, try steaming the potatoes. Place the cut potatoes in a steam cooker and cook them for about 15 minutes, until they are tender but not pasty.
Baking in an oven: Meanwhile, preheat the oven to 180oC. Put the steamed potatoes on a hotplate, water with olive oil, sprinkle with salt, pepper and fresh herbs. Cook in the oven for 20 to 30 minutes until golden and crisp.
Service and conservation advice:
Service: Serve potatoes with meat or alone with your favourite sauce, such as yogurt or garlic. They are perfect for light salads or grilled vegetables.
Storage: If you have more, store it in a sealed container in a refrigerator for 2 to 3 days. They can also be heated in an oven to preserve their crisp texture.
