How to know if the eggs are fresh

Do you know that trick? Here's a quick and easy way to tell if an egg is fresh or out-of-date: soak it in a glass of water and salt. If it floats, the egg is out of date; when it sinks to the bottom, it is fresh.

Why it works
The floating test works by changing the internal structure of the egg over time. As the eggs age, the air penetrates through the porous shell and forms a larger air cell. This increased buoyancy floats older eggs while the freshest ones remain underwater.
