Ingredients:
- 2 whole mackerel, cleaned and gutted (you can ask your fishmonger to do this for you)
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 lemon (zest and juice)
- Fresh herbs (like thyme or parsley)
- Salt and pepper to taste
- A pinch of smoked paprika (optional for a smoky flavor)
- A handful of fresh greens for garnish (optional)
Instructions:
- Prepare the Mackerel: If you haven’t done so already, clean and gut the mackerel. Then, give the fish a good rinse and pat it dry with a paper towel. The drier the fish, the better it will cook.
