1 can (15 oz) chickpeas, drained and rinsed
1/4 cup olive oil
1/2 cup fresh cilantro leaves, chopped
1/4 cup green olives, pitted and chopped
2 tablespoons lemon juice
1 clove garlic, minced
Salt and pepper to taste
Fresh cilantro leaves for garnish
Whole green olives for garnish
Directions
Place the chickpeas, olive oil, cilantro, chopped olives, lemon juice, and garlic in a food processor.
Blend until smooth and creamy, scraping down the sides as needed.
Season with salt and pepper to taste, and blend again to combine.
Transfer the dip to a jar or serving bowl.
Garnish with fresh cilantro leaves and whole green olives.
