Thick and delicious homemade zucchini ketchup without starch

Vegetable preparation  : Peel the zucchini and trim the stems. I use a vegetable peeler. Grate the zucchini on a coarse grater. Grind the onion in a blender or meat grinder using a fine attachment.

Drain the liquid  : Place the grated zucchini in a colander to drain the excess liquid. We also add chopped onions to the zucchini. Try to drain as much liquid as possible from the vegetables.

Stew  : Place the vegetables in a saucepan, add the water, sugar, and salt. Stir, cover, and simmer for 20 minutes over medium heat.

Evaporation  : Remove the lid and evaporate the remaining liquid for 5 to 10 minutes, stirring so that nothing burns.
