For the Chicken Marinade:
1.5 lbs boneless, skinless chicken thighs (cut into chunks)
1 ripe mango (peeled and pureed)
2 tbsp lime juice

2 cloves garlic (minced)
1 red chili (finely chopped) or 1 tsp chili flakes
1 tsp ground cumin
Salt and pepper to taste
For the Skewers:
1 red bell pepper (cut into 1-inch pieces)
1 yellow bell pepper (cut into 1-inch pieces)
1 small red onion (cut into wedges)
Bamboo or metal skewers
Instructions:
Prepare the Marinade:
In a medium bowl, mix the mango puree, lime juice, olive oil, garlic, chili, cumin, salt, and pepper. Stir until well combined.
Marinate the Chicken:
Add the chicken chunks to the marinade and toss to coat evenly. Cover and refrigerate for at least 1 hour (or up to 8 hours for maximum flavor).
Assemble the Skewers:
